You can always make a few loaves! They never last long.

Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup crushed pineapple, drained
2 large eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup chopped walnuts (optional)
Directions
1. Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a 9×5-inch baking pan.
2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
3. In another bowl, whisk together the crushed pineapple, eggs, vegetable oil, and vanilla extract.
4. Mix the wet ingredients with the flour mixture until moistened. Stir in the walnuts, if using.
5. Pour the batter into the prepared baking pan. 6. Bake in the preheated oven for 60 to 65 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
7. Let the bread cool in the pan for 10 minutes, then remove to a wire rack to cool completely.
Variations and Tips

For a little extra flavor, you can add half a cup of shredded coconut to the batter to enhance the tropical flavor. If you’re feeling adventurous, try adding a pinch of cinnamon or nutmeg for a warm, spicy note. For those who enjoy a citrusy note, a tablespoon of orange zest mixed into the batter also works wonders.
