Zucchini cheese bread – Super cheesy & juicy!

Preparation:
Preheat the oven to 180 °C top/under heat. Grease a box shape (approx. 26 x 11 cm) or lay it out with baking paper.
Rubbing coarsely, squeeze well and fry briefly in some oil. Season with salt and pepper.
Mix flour, baking powder, 150 g of cheese and chopped mint in a bowl.
Mix eggs, milk and oil in a second bowl, then add to the mixture of flour and mix everything quickly to a smooth dough.
Remove courgette, fill the dough into the prepared shape and smooth. Sprinkle with the rest of the cheese.
In the oven approx. Bake for 40-50 minutes until the surface is golden brown and a wooden stick remains clean.
Allow to cool something, remove from the mould and serve it best to eat lukewarm.
Tip: Perfect for picnics, as a snack or brunch. If you like, you can also mix bacon cubes or dried tomatoes.
