French Onion Soup

A creamy twist on a classic! This rich, hearty soup is perfect with warm dark Russian bread.


Ingredients

For the Soup:

  • 2 cups thinly sliced yellow sweet onions

  • 2 tablespoons butter

  • 1 can (15 oz) chicken broth

  • 1/4 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

  • 2 chicken bouillon cubes

  • 1/4 cup Velveeta cheese (cubed or shredded)

  • 1 1/2 to 1 3/4 cups thick white sauce (see below)

  • Shredded cheddar cheese (for garnish)

For the White Sauce:

  • 3 tablespoons butter

  • 3 tablespoons flour

  • 1/4 teaspoon salt

  • 1 1/2 cups whole milk
